Has anyone heard of a a program that allows you to load a specific model kit and then allow you to customize the paint scheme to your choosing?
I want to try a couple different looks for a P51 Mustang I just bought and would like to test them out using some sort of software before actually painting.

I've never come across anything like that. You could set up templates using the layers in Photoshop (or a similar programme), but that's be a fair amount of work.
Alternatively, you could browse through the profiles on Wings Palette for some inspiration - or if you want some extreme "What-If" schemes, take a look at these on WW2 Aircraft.
