I think Osprey just came out with a new book on the Harrier in their modelling series.

Squdron's Harrier in Action from the late 80's which covers up to the early AV-8s, but it would not help you with later variants.

Osprey has released a new book on modeling the Harrier I and II and I have a copy to do a review on. I've got the review written, just need to get it up. Look for it soon.

If you can still find the Detail and Scale book on the AV-8 it's pretty good, though it will be a bit dated for mid-90s to OIF stuff.
There's also a pretty good book out there called "Marine Muscle", it covers both the AV-8 and the F/A-18. Late 90s printing
