The color is called AFSOC (Air Force Special Operations Command) Gray. Testors Model Master Gunship Gray (FS36118) is very close to it.

Trivial? In the grand scheme of things maybe but still quite impressive.
I have built one of those beauties in 1/48 scale using the REVELL CH-53 as basis and with a Cobra Company set for the special parts.
Unfortunately, the A/C is in my queen hangar now because it has proven impossible to find proper decals for it. The Choppers galore set that Gino recmmended is out of produciton. The producer primise me that they would bring it back during 2017 but I haven't seen that happen yet.

Gino, could I use this color for a Little bird of the Night Stalkers 160th SOG regiment? If not, I imagine I have to go black?
And last question, I have the little bird just waiting for it's main coat, I'm wondering if someone, somewhere, is making decals for: 160th Special Operations Aviation Regiment (Airborne) in 1/35?

No, for the Littebird, the Gunship Grey is way too light. You want to use flat black, then drybrush it with some dark grey/lightened black, etc. 160th SOAR Littlebirds are flat black, but fade very quickly to a dark, chalky black-gray color.
For decals, yes, Werner's Wings has a couple of 160th SOAR decal sets that include Littlebirds. An example:

I'll undoubtedly only demonstrate my ignorance of this subject, but I ask anyway!
Is this particular machine Gunship Gray all over? There seems to be a wavy colour division on the rear of the fuselage. Maybe between Gunship Gray and Olive Drab? Is/was there a scheme that would feature that?

Not sure as I don't use Tamiya paints, but it sounds like it should work well.

Yes, it is overall AFSOC Gray w/o any other color on it. I think you are seeing either a shadow or a color shift due to the hot exhaust leaving a residue or discoloration on the side of the aircraft.
