F-4, A-4, A-7, F-14, F/A-18 all Hasegawa instructions advise the cockpit color is Dark Gull Grey, this looks really dark, is this correct? I have seen pictures of finished models and it looks much more light in color like Dark Ghost Grey or something like that.

Yes, I know it seems really dark but that is how the one's I've seen come off the assembly line painted, and with black instrument box faces. It sure doesn't do much for allowing your detail work to show in scale aircraft, but that's the color of the real ones ?
Clarification : Can't speak to the F-14 only worked for McDonnell Douglas, and by the way AV-8 Harriers have the same color cockpits. Sometimes referred to as "Boring Navy Gray", other prominent color used for interiors is "Ugly Air Force Green".

So here's what I do, I lighten up the color using flat white ( except when using black in most Helicopter interiors). About 2-3 drops usually works for me. I find doing this brings it to the scale color. doesn't do much for allowing your detail work to show in scale aircraft
