Academy does a couple, as do Hasegawa. Italeri has one as well and IIRC Tamiya also do a few.

In 1/48th scale you've got a pretty good selection of choices:
Tamiya - altho, IIRC this is "sort of" the YF-16
Hasegawa - A/B/C/D and different blocks therein, general consensus seems to be the Hasegawa kits are the best of the lot
Academy - A and C, I really like these kits and (for me) are a good alternative to the more expensive Hasegawa kits
Testors/Italeri - IIRC their F-16 kit (primarily an early A model) allow you to do either a single-seater or two-seater.
Heller - I think it's a re-pop of the Testors-Italeri kit
ESCI - A model, fro a variety of reasons, I'd pass on this one
Monogram - Did a "sort of" YF-16, too, then later marketed it as an F-16A.
Revell - a "ditto" of the comments for the Monogram ki

Hasegawa's are the best in my opinion and I have seen the prices on these vary widly it appears to come down to the decales in the box most of the time. You can shop around for the version you want and get a set of aftermarket decales tha you like still do ok.

and I really enjoyed them

If you wait a few weeks Tamiya is announcing a new 1/48n F-16CJ at the Shizouka Show.
