can I use 2 part epoxy for glueing canopies?

You can, but why would you want too?
Also, Microscale make a glue specifically designed for gluing canopies - its called Kristal Klear.

5-minute epoxy is especially useful for fitting vacform canopies, or, in fact, any that is ill-fitting. With only 5 minutes, to wait, it is relatively easy to hold the canopy in position until the glue sets. As you're in Canada, there's not much point in telling you the glue I use, here in the U.K., but I've found a crystal clear type, which "disappears" in use. If you get your timing right, it's also possible to peel off any excess, which has squeezed out of the join, just before it sets completely. I use the same glue for metal u/c legs, and it's superb for making "glass" landing lights, etc.
