This is my first model since I've returned to the hobby. There are a few things I wish I would have done when I built this one but there is always the next model.

Nice model! Especially for a "return to the hobby" one
As a beginner, I think it's important you follow the following rules (obviously you did):
- choose an easy model
- make a clean build
- have fun
- post some pictures on Aeroscale
There is always something to improve, at any skill level, so it's important to think in a positive way when starting (again) this hobby. At least, you know now that you have the basics to build a nice model. The next steps will be to learn some techniques such as pre-shading, washes, paint-shiping etc... after a few more kits you will see how easy it is to make those models you see in the magazines!

As I said there were some things I wish I would have done differently with this model. One of them being the fact that I didn't have anything to give it a flat coat after the protective future coat was applied. Maybe I can add that later. On that note... do I need to cover the canopy when I spray the flat finish or does it matter? I've always wondered that but have not seen anyone comment on it.

The model was completely built and just needed painted when I started back working on it again.
I guess now I need to select my next build and go from there. I was looking at the Tamiya Dewoitine D. 520 seen here. Does anyone have any insight into this kit?

Yes, you do need to protect the canopy from the flat coat. You can use masking tape, masking liquid or pre-cut masks from the likes of Eduard.

I think the easiest kit to build - ever - has got to be Tamiya's Fw190. Any version. They are so simple and give you ample oportunity to experiment with camo patterns. They look great too. However, they are not the most accurate kits but they are good for beginners.
In fact, most Tamiya 1:48 aircraft are a breeze too build.

Jeramie, have a look at this article 'New word document' on my website. Its the begginers guide to building aircraft that I am writing and it will be posted on Aeroscale soon. Its not finished and it will be edited some yet but it may give you a few tips. There are also some pics of the kits used in the article.
