Hi Matt,
I have a book on the Stuka that I really like. It is an older book and a little bit harder to find but I did look on ebay and there is a copy of this book there that ends on X-mas day. It is called 'STUKA Ju87 - text by Alex Vanags-Baginskis and illustrations by Rikyu Watanabe. The book is a good history of the Stuka and there are lot of great photos and diagrams of the cockpit and structure of the aircraft.

Kagero makes a nice serie on the Stuka which includes colour profiles, scale plans, history, bonus decals and maskings for the camouflage for a 1/48 Stuka.

Highly recommended. You can get them from Jadar hobby and other well assorted hobby stores.

Also I forgot one of the most obvious choices. I have not actually looked but I will almost guarantee that Squadron has a book or two on the Stuka. All of their books are filled with great pics and details also. Their site is simple to get to squadron.com.
