For kits that are available the Eduard kit of the Roland is , there is the weekend edition or the new orange boxing . Mirage kit of the Halberstadt is already out on the market . Nice kit but will not be able to get it here in Canada so it will be one which I won't be able to get
Eduard has the F.2b in five ? different boxing . 2 of them are the limited editions which might be hard to get , but I have seen some out there still just have to shop around for them . As for the Albatros C.III and the Hannover these kit's are long out of production , might be able to get one on e-vil bay but will be very pricey !!!!
Roden kits are still easy to get in 48 scale , not sure about their 72 line . They have the Sopwith 1 1/2 strutter in three different boxing's . Then there is the DH-4 and they also do the F.2b in different boxing's as well . Have a look at your LHS , might have to order one in or check on line . Copper State Models has 2 seaters as well but these are resin kits not easy put together . Bluemax also has a great selection but are hard to find each kit is limited with only 1500 of each made The company has been sold to freight dogs but will still carry the bluemax name and they are re-release some of the kit's . Lot's of vac kit's are out there as well such as joystick , Merlin , Sierra scale , Lonestar .......the list goes on and on ............................

Don't forget the Lindberg 1/48 Curtiss JN-4. With a bit of work it turns out pretty nice.

There must be a mile of wire in the real thing. I also re-built the engine a bit to make it look a little more like the Curtiss OX-5. Add a couple of spoked wheels and, hey presto, one of a kind.

I can't commit to this at the present time, but maybe a little closer to the projected time frame. It would be fun to do another after having one under my belt.

Oh Yeah, I forgot, I also still have two Roden BE2c's in the stash too.
Here is as far as I have gotten with the first build of that kit, It's been at this stage for a year now.

A nice challenge could also be Karaya's DFW CV. Forgot (how could I!) I also got one of these in my stash, together with two other options: Eduard's Albatros CIII, and High Tech's Brequet XIV. Choices, choices....

I think I've found my kit.. Special hobby 1:48 Lloyd C.V ! There is not much central powers 1:48 2-seater offering, but after searching for while I found perfect one.

@ Terri As this is a wonderful idea you may count on me too. I wil search in my confused brain and dig out a nice twoseater. Of course it will be an Austro Hungarian item. Maybe an Etrich monoplane... like the one I do stripdown or another wired piece.
